How did this magical marriage come to be? Tsubaki Chef de Cuisine Klementine Song says, “The first time I tried Holy Basil I became an instant fan. I could not stop talking about the Moo Krob, how juicy and tender the belly was contrasted with the perfectly puffy, crunchiness of the skin. Their menu seemed to be on a similar wavelength as Tsubaki’s with an eclectic mix of raw, braised and wok-fired staples; though the taste could not be more different. I love the big flavors of Thai food in general, but Holy Basil’s sauces are so delicious I would lick the plates clean if that were socially acceptable to do in public [editor’s note: Klem, it is. It totally is].
