The Must

The Must (117 Winston St., Los Angeles, CA 90013; 213.628.2000) is back. The Downtown wine bar is reopening Thursday in a new spot on Winston. With an industrial bistro feel  made from brown booths, gold lighting, a glass wine closet, and a central bar, they have 100 of wine-by-the-glass options. You can sip from Slovenia, Greece, and Mexico, just to name a few,

As for food, order up starters like Beef Brisket Chili  with hominy & works; Smoked half of a Head of Cauliflower smothered in vegan Worcestershire & Dijon mustard; Mac & Cheese Square with goldfish crumble; the Sea Monster: Cornmeal muffin stuffed with a saucy seared shrimp etouffee; Schnitzel Schlydaz “sliders” with red cabbage kruaght & mustard crème fraiche; Jalapeño Hush Puppies with remoulade add chili & works for Smothered Puppies; and Buffalo Cheese Curds.

Salads include Caesar Chavez Salad with cotija cheese, chicken skin chicharron & cilantro caesar dressing; Mrs. Potato Salad with fingerlings, leeks, brussel sprouts, roasted radishes, quail eggs & upland; and L.A. B.S. – butter lettuce, avocado, bacon & shrimp with remoulade dressing.
Sandwiches include Must 2 Grilled Cheese (chose 2 cheeses) Humboldt Fog, Fiscalini Cheddar, Manchego or Point Reyes Blue and The Must BBQ Brisket.

Mains include The Must Soy Hamburger Helper (ground soy hamburger meat, noodles, broccoli & cheddar sauce); Cholo Fried Rice with a choice of carnitas or smoked tofu; Beet Loaf (vegan meatloaf made with red beets & quinoa, w/ charred brocolini and tarragon oil); Chicken Pot Pie a la Mode; and Pork Pie, their “Mexican Sheppard’s pie” with carnitas style shoulder, avocado, pickled shallots
topped mashed yucca and cotija cheese.

Leave room for desserts like Fluffernutter (smoked almond & roasted peanut butter, marshmallow fluff and bananas on grilled brioche with dark chocolate ganache); Monkey Bread (sweet biscuit balls with cinnamon & salted caramel); and Birthday Cake…yes, its ice cream!
