The dough is distinctly Tartine: crafted with the Biga method, then blended with Tartine’s sourdough starter and durum flour before a two-day cold fermentation. The result is a light, crispy crust with deep flavor—an evolution of Chad Robertson’s renowned levain technique, refined by Tartine’s bread and culinary teams.
