- Brine the wings (at least 2 hours)
- Pat completely dry: Remove wings from the brine and thoroughly dry with paper towels to help the skin crisp up.
- Season simply: Season wings with salt and pepper to build a solid flavor base.
- Rest in the fridge (30 minutes): Place wings uncovered in the refrigerator to dry the skin further and improve texture.
- Preheat oven to high heat (425°F+): Use convection if available for even cooking and extra crispiness.
- Place wings on a rack: Set wings on a wire rack over a baking sheet so air can circulate underneath for maximum crunch.
- Cook for about 25 minutes: Bake until wings reach an internal temperature of 160°F and skin is golden and crispy.
- Toss in butter: Coat hot wings lightly in melted butter to help seasoning stick and add richness.
