Our LA culinary cup runneth over with too much good stuff, including this tasty collaboration between two revered (well, beloved is more like it) altars of good food, Holy Basil and Tsubaki. How did this magical marriage come to be? Tsubaki Chef de Cuisine Klementine Song says, “The first time I tried Holy Basil I became an instant fan. I could not stop talking about the Moo Krob, how juicy and tender the belly was contrasted with the perfectly puffy, crunchiness of the skin. Their menu seemed to be on a similar wavelength as Tsubaki’s with an eclectic mix of raw, braised and wok-fired staples; though the taste could not be more different. I love the big flavors of Thai food in general, but Holy Basil’s sauces are so delicious I would lick the plates clean if that were socially acceptable to do in public [editor’s note: Klem, it is. It totally is]. For this collaboration, we wanted to see what it would be like if we took the format of Tsubaki’s dishes, infused them with Holy Basil’s aromatics, and then paired them with sake.” Damn, I love LA!
