Public School on Tap‘s Burger Wars 2017
This chef-driven gastropub is continuing Burger Wars 2017, where every month until July, chefs at each Public School restaurant will create a specialty, limited edition burger using seasonal, trending, or unusual ingredients. A specific beer pairing will accompany all burgers. This month, Public School Chefs throughout Los Angeles are featuring the following burgers for the competition: Public School 213 (DTLA) is serving The Bad Hombre Burger made with a beef patty stacked with melted bleu cheese, lettuce, and avocado on a toasted brioche bun with spicy mayo, then topped with crispy fried onion strings drizzled with avocado ranch and sprinkled with parsley and a jalapeño skewer; Public School 310 (Culver City) is serving Jidori Chicken Club made with Jidori chicken, cilantro pesto, avocado, tomato and poblano sauce; Public School 818 (Sherman Oaks) is serving The Smokehouse Burger made with candied bacon, onion rings, pepper jack cheese and whiskey BBQ sauce; and Public School 805 (Thousand Oaks) is serving Jalapeño Popper Bacon Burger made with Jalapeño cream cheese, cheddar cheese, BLT, crispy shallots and pico de gallo.

Truss & Twine Opens
Truss & Twine, the second concept from celebrated Executive Chef/ Owner Michael Beckman, has a Palm Springs’ sophisticated desert vibe. Truss & Twine specializes in classic cocktails broken down by era, alongside a desert-inspired menu using ingredients from the Coachella Valley. Truss & Twine’s Bar Managers, Dave Castillo and Michelle Bearden, who are behind the cocktail program, look at five eras of cocktails, including the “Golden Age,” “Prohibition,” “Tiki,” “Dark Ages,” and Castillo and Bearden’s own creations, the “Originals.” Beverages in the Golden Age include the Old Fashioned with bourbon, sugar, bitters, orange and lemon zest; the Prohibition includes the Hanky Panky with barrel-aged gin, sweet vermouth, Fernet Branca; the Tiki includes 3 Dots And A Dash with rhum agricole, Demerara Rum, orange, lime, honey, falernum, allspice dram, bitters; the Dark Ages look at the “bad cocktails” of the ‘80s and ‘90s, including an updated White Russian with Vietnamese coffee-infused gin, NOLA Coffee Liqueur, heavy cream. The team’s “Originals” highlight infamous aspects of Workshop Kitchen + Bar including the Velvet Touch made with Dickel rye, Amaro Nonino, Pedro Ximenez sherry, and orange zest. Aside from its extensive cocktail selection, Truss & Twine also serves a program of mixed drinks, a selection of beer, ciders, and wine on tap. The bar menu includes snack offerings like sliced-to-order California cheese and charcuterie like Californian Cypress Grove’s Lamb Chopper, and jamon iberico. Dishes include rabbit confit, braised mesquite pods, honey goat cheese in bougainvillea and cactus confit. 800 N Palm Canyon Dr, Palm Springs, CA; 760.459.3451 (photo: Audrey Ma).
