The Tokyo original, Rokusho, will be celebrating the coming new year in Hollywood with a prefix menu inspired by classic Japanese night market dishes. In the intimate, concrete-clad dining room, guests will begin with a complimentary champagne toast followed by the bright and refreshing Kanpachi Crudo with Pickled Wasabi and Shiso vinaigrette, served with green apple granita. For Chef Carlos Cout’s take on crispy street snacks with a sweet and tangy twist, the meal continues with Sweet Corn Tempura with Yuzu Honey Glaze. The third course offers a refined interpretation of on-the-go rice balls as Eel and Avocado Onigiri Bites, brushed with a soy-caramel glaze. With a nod to the sizzling grills of market stalls, the Grilled Saba with Miso Butter Sauce will be prepared over charcoal for a bold and smoky dish. Rich, umami flavors will lead on the 5th course of pan-seared Duck Gyoza with Black Garlic Ponzu dipping sauce.
