First on the Mole Festival list is the pumpkin seed Mole Pipián, which blends tomatillos, chile poblano and nuts into a slightly spicy sauce accompanied by chipotle rice and black beans. Next, there is the Puebla-inspired Mole Poblano, which pairs nutty flavors with chiles, spices and Mexican chocolate; the mildest, Mole Rojo made with chile ancho and cumin; and the Mole Negro, a medium-spiced smoky sauce crafted with charred tomatoes, toasted nuts and avocado leaves. If you want to try all four, order the Enmoldada Quesadillas, which offers a tasting of all four of the mole sauces served over a platter of cheese quesadillas. You can wash it all down with two specialty cocktails: the Habanero Blood Orange Margarita is made with Tequila Reposado, fresh citrus, and blood orange-habanero purée, and is finished with a black, mole negro rimmed glass and the Guava Mojito, a softer version of the Cuban classic crafted with rum, fresh mint, lime juice and a sweet, guava purée.
