Einat Admony, the chef-owner of New York City’s popular Balaboosta, Bar Bolonat, and Taïm restaurants, is teaming up with Mauro’s Cafe at Fred Segal to test the waters for a possible west coast expansion.
Admony is a 21st-century balaboosta (Yiddish for “perfect housewife”) herself. She’s a wife, mother, an avid home-cook, cookbook author and a chef busy running New York City restaurants, which includes Balaboosta, the ten-year old falafel joint Taïm, and ten- week old Bar Bolonat.
Admony will be serving elevated versions of the same dishes that you might find on any given night at Balaboosta, such as Shrimp Kataïf with tobiko sauce and Adobo-Rubbed Skirt Steak with charred tomato, spring onions, cherry tomato vinaigrette. While in Los Angeles, Admony will blend her Israeli heritage with inspirations from fresh, California spring produce to make sophisticated Mediterranean plates in this three-course tasting menu, perfectly accompanied with optional wine pairings.
