Greenspan’s Grilled Cheese

Chef Eric Greenspan has announced that Greenspan’s Grilled Cheese, (7461 Melrose Ave.) will officially be open on April 11th. I mean, it’s National Grilled Cheese month, so it fits!

Greenspan became known for his grilled cheese years ago, when he opened The Foundry on Melrose, and decided to do a riff on the classic cheese plate and created a Grilled Cheese sandwich that included taleggio cheese, raisin walnut bread, apricot spread and a short rib option. The sandwich was then declared The Champ after winning the 2008 Grilled Cheese Invitational in Los Angeles. When Alton Brown and the Food Network declared The Champ the #3 comfort food in America, it was clear the sandwich needed a home of its own.

In addition to The Champ, sandwiches on the menu include Johnny Apple Cheese (sourdough, aged white cheddar, apple mustard chutney and pastrami); Buffalo Blue (rye bread, blue cheese, spicy carrot-celery slaw and fried chicken tenders) and The Med (challah bread, goat cheese, tomato, artichoke and roast peppers/avocado). Also on the menu are salads like the Green and Blue (kale, candied nuts, sliced apples and blue cheese croutons), tomato basil soup, Greenspan’s infamous Latke bites, and desserts- including The Elvis (white bread, banana, peanut butter and goat cheese) and Throwback Apple Pie, as well as house crafted seltzer drinks like green apple ginger, pineapple cassis and a blood orange creamsicle.

Chef Greenspan plans to keep the creativity coming with seasonal sandwiches featuring artisan cheese makers from around the country and locally sourced produce.
