West Hollywood’s olive oil oasis, FIG & OLIVE Melrose Place, invites you to an intimate, hands-on cooking class led by Executive Chef Pascal Lorange. A former private chef to Spanish singer Julio Iglesias among other celebrity clientele such as Oscar de la Renta, Princess Stephanie of Monaco, and the Clintons, Lorange’s clean cooking style embodies the flavors of the French Riviera, using olive oils in place of butter and cream.
During the class, Chef Lorange shares his tips and tricks for preparing a spring-inspired four-course FIG & OLIVE meal, including: Chilled Cucumber Soup with mint, lemon, orange, and pink peppercorn; Zucchini Carpaccio with lemon, pine nut, parmesan, and Picholine Olive Oil; Chilean Sea Bass Papillote marinated with lemon thyme, carrot, asparagus, celery root purée, heirloom potato, charmoula mascarpone, and harissa olive oil emulsion and Apple Tart with caramelized apples and vanilla ice cream.
Sharpen your culinary skills under the supervision of Lorange and learn about cooking with olive oil as well as culinary techniques such as baking “en Papillote” or “in parchment.” Afterwards, toast to the afternoon with a Piscine Cocktail made of sparkling wine and organic strawberries.
