Taco Maria (3313 Hyland Ave., Costa Mesa, 92626; 714.538.8444), is a food truck turned brick and mortar by former Commis (SF) pastry chef Carlos Salgado is open and serving up some Mexican. Salgado designed Taco Maria with help from architect/friend Robert Puertas with a counter and tables designed with American black walnut and custom raw steel accents. There’s also a vintage oak dining patio with tables made by Salgado’s family.
The menu is full of Mexian/Cali plates like roasted green beans with peanut, pineapple and pork rinds and duck, cocoa bean, chile, smoked dates, and toasted almonds served with fresh tortillas.
