Anthony Carron, Noah Ellis, Steven Fretz, and Jamie Tiampo announced are opening Top Round Roast Beef (1000 S. La Brea Ave., Los Angeles, 90019; 323.549.9945) in Los Angeles in the former home of Pop’s Burgers, most recently occupied by Bee’s Donuts.
This Monday, the retro spot will serve fresh and regionally inspired roast beef sandwiches ($4.75 to 6.45) made from 100% USDA Choice beef, curly fries, frozen custard and handspun concretes. All of the sandwiches are served with au jus and special seasoning on a butter-toasted bun. You can get yours just with the au jus or with housemade “wizz” cheese, or order up a Beef on Weck, with spicy horseradish on a caraway-and-sea-salt bun. Any way you go, the roast beef is slow-roasted for 12 hours with a 10-spice rub. The curly fries are made fresh in-house from Idaho potatoes and fried in pure beef fat. The frozen custard menu at Top Round features an extra-rich and creamy vanilla base that you can get in the form of shakes, malts, concretes or sundaes. The concretes are like milkshakes, but so thick you can hold them upside down. You can get yours with 20 toppings, fruits and syrups. The restaurant also has a Coca-Cola Freestyle machine, where you can create floats with 127 different flavors.
