Mario Batali, Joe Bastianich, and Nancy Silverton (Pizzeria Mozza, Osteria Mozza, and Mozza 2Go) are opening chi SPACCA (6610 Melrose Ave., Los Angeles, 90036) on February 4 in place of their Scuola di Pizza. chi SPACCA, or “cleaver” in Italian, relates to chef Chad Colby’s successful Salumi Bar nights inside the Scuola. Back in May, Colby launched the first certified salumi program in Los Angeles (menu) available only Thursday nights, but overwhelming popularity made him serve on a more regular basis.
Right now chi SPACCA, is only licensed to serve alcohol until 11 pm, therefore the eatery will offer just two seatings of 30 seats per night, Monday-Friday, at around 6 pm and 8 pm. Management is hopefully to extend the liquor license in the future. Anticipate 10 wines on offer daily, with a list that changes on the regular.
