Adam Fleischman/AdVantage Partners are at it again. (I don’t think they have ever stopped). Their Spanish restaurant and wine bar, smoke.oil.salt (7274 Melrose Ave., Los Angeles, 90046), has Perfecto Rocher (Lazy Ox) in the kitchen and is opening this Thursday. Expect a mix of traditional and modern Spanish tapas with a focus on seafood, Iberico hams, and paella. If you’re a fan of paella, make sure to swing by Sunday and Monday nights, designated paella night.

smoke1You can expect dishes like Socarrat (crispy rice with fish and romanesco florets) Carabineros (giant Spanish prawns with Bloomsdale spinach and sea salt); Flam d’Erico (fresh sea urchin flan with fried capers and shrimp oil); Salpico D’Orxata i Ostres, Clotxines (oyster and mussel cocktail, marinated in tiger nut milk); Bunyols de Bacallà (cod croquetas, citrus aioli); Bravas Trencades (fried potatoes, Serrano ham, chorizo, fried egg); and Flan D’ericó (sea urchin flan, caviar, shrimp chili oil). My favorites were the  Pa amb Tomaca (grilled Catalan tomato toast with home made sausages); Truita de Carxofes (artichoke omelet, meyer lemon aioli); Calcots (smoked spring onions, salbitxada sauce); Espencat de Moixama (roasted wood-fire eggplant, red bell pepper, marcona almonds, salt-cured Valencian tuna); and the perfectly cooked Pluma Iberica (wood-fire grilled butcher’s filet Iberico pork, smoked green onions, Xato sauce).

For wine, it’s unlimited corkage for $20/bottle, however for every bottle you buy at the restaurant after 2 corkages, they’ll waive one. So, if you bring in 3 bottles and buy 1, you’ll just pay for 2 corkages. Bring someone whose good at math (I am not). Open  5:30 pm-midnight nightly, with a late night food menu after that and wine service until 2 am.

Lil word to the wise…they take the smoke aspect seriously. You may take the smell home with you.
